You might not know what to do with a pork cube.  But if you've ever had Green Chili in Colorado, you've enjoyed pork cubes.  Pork Cubes are a lot more versatile than you think.  Use these as garlic butter pork bites, honey garlic bites, or things like crispy pork carnitas.  These can also be brined for a short period of time to help facilitate tenderness.
