1 pkg of SMCo Pizza Brat, or any Italian style sausage. Casing removed.
1 yellow onion diced
4 garlic cloves, minced
1 24oz jar of tomato sauce. We prefer Raos marinara.
1 14oz can of crushed or petite diced tomatoes
2 T tomato paste
2 tsp balsamic vinegar
1 1/2 tsp sugar
1 T dried basil
1 tsp each of parsley, oregano, salt & pepper
1 bay leaf
10 uncooked lasagna noodles broken into 1 inch pieces
1/2 cup heavy cream, optional*
Shredded mozzarella cheese, optional for topping*
Ricotta Cheese, optional for topping*
Heat large Dutch oven over medium heat. Add sausage and onions and cook until sausage is browned.
Add garlic and saute for 1 minute. Drain off any excess fat.
Add tomato sauce, 6 cups chicken broth, crushed or diced tomatoes, tomato paste, balsamic vinegar, sugar and spices. Stir and bring to a simmer.
Add in lasagna noodles, bring to a boil, then reduce heat to a simmer until lasagna noodles are tender. Stir occasionally, approximately 20-30 minutes.
Discard bay leaf and stir in heavy cream. (This is optional - but recommended if you prefer a creamer soup.)
Serve and garnish with mozzarella, parmesan and/or ricotta cheese. Add to your liking and enjoy!!
