1 pkg SMCo Tuscan Vodka Sausage
12 oz Rigatoni Pasta, or any short pasta of your liking
2 T Butter
1 tsp Olive Oil
4 tsp garlic, minced
2 T Flour
1 1/2 Cups Chicken Broth
1 Cup Heavy Cream
1/3 Cup grated Parmesan Cheese
1 12-ouncejar roasted red bell peppers -chopped
1 cup baby spinach
Salt, Pepper and Red Pepper Flakes to taste
Boil pasta for 8-9 minutes until tender, drain and toss with 1 teaspoon olive oil. Set aside.
In a large skillet, Remove sausage from casings and brown for 5-7 minutes until sausage is fully cooked. Transfer to a dish and cover to keep warm.
In the same dish, melt butter. Stir in garlic for 1 minute until fragrant.
Stir in flour, then whisk in chicken broth. Whisk in heavy cream, parmesan cheese, crushed red pepper flakes, salt, and pepper.
Stir in noodles, browned sausage, roasted red peppers, and baby spinach.
Simmer for five minutes before garnishing with fresh herbs, parmesan cheese and freshly cracked black pepper (optional). Serve and Enjoy!
